On a roll today! I’m a big fan of using miscellaneous ingredients I have on hand to spice up dull recipes online.

Pimp My Ramen Casserole –
FILLING:
- 1 1/2 lbs. ground beef
- 1/2 c. chopped onions
- 1/2 c. Red, green and white peppers, mixed
- 1 pkg. Chili seasoning mix (reserve 1 tsp. for top)
- 1 can creamy tomato soup
- 1 pkg. Ramen Noodles
- 15 oz. can black beans
TOPPING:
- 1 c. complete pancake mix
1 tsp. reserved taco mix
1 c. shredded Cheddar cheese
1/2 c. milk
1 egg - American cheese slices to cover top
1 tsp. parsley flakes
Preheat oven to 400 degrees. Sautee onions and peppers in olive oil. Brown beef in onion n pepper mix; drain. Stir in seasoning mix, soup, ramen noodles and beans. Simmer while preparing topping. Combine all topping ingredients except parsley and american cheese slices and blend well. Pour meat mixture into a shallow 3 quart casserole dish or 13×9 inch pan. Spoon topping over meat and sprinkle with parsley. Bake uncovered for 20 minutes until brown.
